Recipe: White Adobo

White Adobo

Serves 5
Prep and Cooking Time 1 hour and 15 minutes

1 kilo kasim or liempo (pork belly), adobo cut
1 whole garlic pounded
2 cups white vinegar
1 cup water
5 1/2 tablespoons white sugar
3 teaspoons salt
2 pieces bay leaf
1/4 cup peppercorn

Instructions:
1
Marinate meat in garlic and vinegar for 30 minutes.
2 Put water, bay leaf, peppercorn, sugar, and salt in a pot and add in meat mixture.
3 Let boil then lower heat and simmer meat until tender, about 30 to 40 minutes.

Tip!
For adobo flakes: Flake meat and stir-fry in oil.

Recipe: Alfredo Chicken Tortellini Recipe

Alfredo Chicken Tortellini

Ingredients

  • 1-1/2 cups frozen cheese tortellini
  • 1 boneless skinless chicken breast half (6 ounces), cut into 1-inch cubes
  • 3 bacon strips, chopped
  • 3 teaspoons minced garlic
  • 1/8 teaspoon adobo seasoning
  • 1/3 cup chopped onion
  • 1/3 cup chopped sweet red pepper
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1/2 cup 2% milk
  • 1/3 cup sour cream
  • 2 tablespoons grated Parmesan cheese
  • 1 cup frozen chopped broccoli, thawed and drained

Directions

  • Cook tortellini according to package directions. Meanwhile, in a large saucepan, cook and stir the chicken, bacon, garlic and adobo seasoning over medium heat until chicken is no longer pink. Add onion and red pepper; cook and stir until tender.
  • In a small bowl, combine the soup, milk, sour cream and Parmesan cheese; stir into chicken mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes.
  • Drain tortellini; add to chicken mixture. Stir in broccoli; heat through. Yield: 3 servings.

Baked Salmon with Buttered Vegetables.

Serves 4 to 6.

Ingredients:

day-old pan de sal, finely chopped to make coarse bread crumbs
1/4 c. of butter
500 g. of salmon fillet
salt
pepper
3 c. of frozen mixed carrots, peas and corn, thawed
1 c. of grated cheese (I used sharp cheddar)

Preheat the oven to 400oF.

Melt half of the butter in a pan. Add the bread crumbs and fry gently, stirring, just until lightly browned. Transfer to a plate.

Melt the remaining butter in the pan. Gently place the salmon fillet in the pan and cook one side only for about four minutes or just until the lower half of the fillet turns opaque. Transfer the salmon to a baking tray.

In the remaining butter, pan fry the vegetables for about a minute. Arrange the vegetables around the salmon fillet in the baking tray.

Sprinkle the fish and vegetables with salt and pepper. Cover the fish with the grated cheese. Top with the bread crumbs. Bake for 5 to 6 minutes.

Allow the fish to rest for 5 minutes before cutting and serving.

SmoresSmores is a sure fire way to get my kids all excited to go camping! We haven’t really camped outdoors in real life but we pretend play about camping all the time – complete with
sleeping bags and backpacks! (We just camp out in the living room complete with TV, a fan, and a bathroom and toilet!).

We also have tried camping at the back of our house. Plastic Play Centers are a great way to let the kids pretend that it’s truly a jungle and they are making their way through a maze of trees and vines (like Tarzan and Jane). I remember me and my cousins used to do this a lot.

And of course at the end of our camping at night, just before we go to sleep, we make sure to start a bonfire and cook up some smores.

INGREDIENTS

  • 1 large marshmallow
  • 1 graham cracker
  • 1 (1.5 ounce) bar chocolate candy bar

DIRECTIONS

  1. Heat the marshmallow over an open flame until it begins to brown and melt.
  2. Break the graham cracker in half. Sandwich the chocolate between the cracker and the hot marshmallow. Allow the marshmallow to cool a moment before eating.

Recipe: Buffalo Wings

The boys in the family are suckers for anything spicy. I am sure they will enjoy this one very much.

Buffalo Wings

Ingredients

* 1/4 cup butter
* 1/4 cup louisiana hot sauce
* 1 dash pepper, Ground
* 1 dash garlic powder
* 1/2 cup flour
* 1/4 teaspoon paprika
* 1/4 teaspoon cayenne pepper
* 1/4 teaspoon salt
* 10 chicken wings
* bleu cheese salad dressing
* celery
* vegetable oil, for frying

Directions

1. Combine the flour, paprika, cayenne pepper, and salt in a small bowl.

2. If the wings are frozen, be sure to defrost and dry them.

3. Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly.

4. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.)

5. Heat oil in a deep fryer to 375 degrees.

6. You want just enough oil to cover the wings entirely — an inch or so deep at least. Combine the butter, hot sauce, ground pepper, and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients are well blended.

7. Put all the wings into the hot oil and fry them for 10 to 15 minutes or until some parts of the wings begin to turn dark brown.

8. Remove the wings from the oil to a paper towel to drain.

9. But don’t let them sit too long, because you want to serve the wings hot. Quickly put the wings into a large bowl.

10. Add the hot sauce and stir, coating all the wings evenly.

11.  You could also use a large plastic container with a lid for this.

12. Put all the wings inside the container, add the sauce, put on the lid, then shake. Serve with Bleu cheese dressing and celery sticks on the side.

Recipe: Chicken Teriyaki

This one is very easy. It is something I can do overnight and just fry in the morning. Perfect for the kid’s lunch at school.

Chicken Teriyaki

  • 2 pounds boneless chicken breasts

Marinade:

  • 1/2 c oil
  • 1/2 c soy sauce
  • 1/2 c honey
  • 1 onion — chopped
  • 2 cloves garlic — chopped
  • 1/2 tsp ginger — (1/2 to 1)

Instructions:
Prepare marinade.
Pound chicken between waxed paper until relatively flat
Marinate chicken at least 12 hours.
Grill on gas grill until done.

Recipe: Fruit Flan

Fruit Flan

A shortbread biscuit base filled with a light custard and topped with an abundant mixture of seasonal fruit.

An easier option:

PASTRY:

1/2 c. butter
1/2 c. sugar
1 egg
2 c. flour
1 1/2 tsp. baking
Pinch of salt

FILLING:

1 packet blackberry gelatin
1 lg. can fruit (of your choice)
2/3 c. cream

1. Cream together butter and sugar. Add egg and beat well. Sift flour, baking powder and salt and add to mixture. (Pastry should be dry.) Roll out and line a 10" square tin and bake in a 350 degree oven until a pale golden color. Remove from tin and cool.

2. Make gelatin by heating the syrup from the drained fruit and make up to 2 cups with boiling water. Add gelatin and stir until dissolved. Cool.

3. When gelatin begins to thicken, add fruit and pour into baked and cooled pastry shell.

4. When ready to serve, whip cream and spread over the top of the flan. Serves 6 to 8.

Italian Grilled Chicken Breasts

Ever since our helper came back a month ago, I have not set foot on our kitchen to cook. I think the longest time I went there to cook was just to cook some hotdogs and eggs for my kids. And when I need to reheat our meal for the night.

I noticed that we need to add variety to the meals we eat because my husband has been complaining that what we ate last week is what he is still eating the next week. Plus I noticed the kids get tired of eating the same food all the time so I’m on the look out for new recipes. Thankfully, I don’t need to buy recipe books because there is so many recipes I can search on the web, most especially at SandyandSue.com. We love Italian (pasta) and American (burgers, steaks, fries) food the best so this site is perfect for us. There is a community at the site where I can ask questions about food and members can share their recipes as well. I have bookmarked the site and will really turn to it if I am running out ideas. Most especially now when we are eating more chicken, less pork and beef (trying to lose weight, as always).

Ingredients

4 large chicken breasts
1 tbsp black pepper (freshly ground)
2 lemons
3 tbsp olive oil
2 tbsp freshly chopped oregano

**to taste sea salt

Directions
  1. Grate the zest of one lemon.
  2. Mix it with the pepper, oregano and oil and let marinate for 30 minutes.
  3. Just before grilling the breasts, put on the salt and smother them in the juice of one of the lemons.
  4. Cook on the grill.
  5. When they come off the grill, squeeze the juice of the other lemon over them.
  6. Serve!

Serves:  4   Ready in:  40 minutes
