More Recipes.

I am trying to cook more at home and since I really do not know how to cook, it has been hard trying to come up with different recipes everyday, especially if you have kids under 10 as your main eaters. Plus, I only cook chicken these days as I am trying to stay away from pork. It has been proven effective as I do not have breakouts anymore nor need an acne pill.

I am trying to cook in batches because I do not have time to spend hours everyday in the kitchen when I need to work, clean up the house and look after my kids, so this one might be interesting. My son loves toppings!

Recipe: Kip Saté a La Mina

Ingredients:

  • chicken breasts or fillet
  • garlic
  • onion or scallions ( I used scallions coz TS doesn’t like onions)
  • soy sauce
  • vinegar
  • ketchup
  • sugar ( I used granulated white)
  • peanut butter

Procedure:

  1. Chop onions or scallions and cut chicken into cubes.
  2. Heat pan and add cooking oil.  When it is hot enogh, add the chicken and cook it to brown.
  3. Once brown, you can either take the chicken out of the pan or toss them on the side as you make a place to sauté the garlic and then the onions or the white part of your scallions.
  4. Season with soy sauce and stir.  Add a small amount of water to cook the chicken more.
  5. Then add a little bit of vinegar to neutralize the flavor.  Stir.
  6. Squeeze in some ketchup to give a sweet taste.  Stir.
  7. If you’re using scallions, now is the time to add the green leaves of it.
  8. Stir in about two tablespoon or so of peanut butter and remove from heat.  The peanut butter will thicken the sauce and will give the soul of this dish.
  9. Serve with rice and some love!

You can top it on plain white rice or side it with flavored rice.  I served mine with Cheddar Broccoli Rice and the flavor is overpowering.  I think this dish is best with plain white rice.  It was a knock out!  Try it and see for yourself.  With this recipe, everyone can cook!

Chubby Hubby’s Best 10 Meals of 2009

I resolve to try at least two of the meals he mentioned, considering two of his best meals came from the Philippines! I undoubtedly would need the best weight loss products after eating.

You can read the blog post here, and I am posting his reviews on two of those Pinoy restaurants: Bistro Filipino and Antonio’s (which is only 30 minutes from my place!)

9. Bistro Filipino, Manila, The Philippines
S and I were an hour and a half late to dinner… not because of the traffic or any other excusable reason, but because S was caught up in the frenzy of exploring all the great local designers in Greenbelt 5. We had SMS’d our friend apologizing. She said not to worry. No one was ever on time in Manila anyway, she told us. By the time we arrived, we were starving and apologetic (S was also laden down with new purchases). Chef Roland Laudico, a friend of our friend, arranged for us to try what felt like a parade of his most exciting and popular dishes. The food, Modern Filipino is the only real way to describe it, was amazing. If I close my eyes, I can still almost taste the sinfully rich but oh so good Adobo Overload he made for us. For a full run-down of the meal, you can read about it here. I’m dying to revisit this very special restaurant. Or better yet, convince someone to open a branch here.

1. Antonio’s, Tagaytay, The Philippines
My favourite meal of 2009 took place in a charming, manor home 90 minutes south of Manila. Antonio’s is, to me, the French Laundry of The Philippines, a beautiful, culinary gem set in a charming rural environment that foodies flock to for long lunches, romantic dinners, and special occasions. S and I visited Antonio’s in August last year (read about the trip here) and we’ve been dying to return ever since. I just need to go on a diet first in order to prepare for my next meal there. Because while the food is fabulous and some dishes are charmingly sophisticated, it’s also heart-stoppingly rich. Antonio’s is one restaurant I’d be happy to travel to The Philippines to eat at every single year.

Carpal Tunnel Syndrome

If you are spending too much time on the computer, typing and clicking on your mouse, in the wrong position, and are experiencing joint pain specifically wrist pain, you might be a candidate for Carpal Tunnel Syndrome (CTS).

What is it?image

Carpus is a word derived from the Greek word "karpos" which means "wrist." The wrist is surrounded by a band of fibrous tissue that normally functions as a support for the joint. The tight space between this fibrous band and the wrist bone is called the carpal tunnel. The median nerve passes through the carpal tunnel to receive sensations from the thumb, index, and middle fingers of the hand. Any condition that causes swelling or a change in position of the tissue within the carpal tunnel can squeeze and irritate the median nerve. Irritation of the median nerve in this manner causes tingling and numbness of the thumb, index, and the middle fingers, a condition known as "carpal tunnel syndrome."

Initial treatment usually includes rest, immobilization of the wrist in a splint, and occasionally ice application. Patients whose occupations are aggravating the symptoms should modify their activities. For example, computer keyboards and chair height may need to be adjusted to optimize comfort. These measures, as well as periodic resting and range of motion stretching exercise of the wrists can actually prevent the symptoms of carpal tunnel syndrome that are caused by repetitive overuse. Underlying conditions or diseases are treated individually.
