Spinach and Artichoke Fondue – Cyma

A few friends posted Greek food a few days ago and I remembered eating this very delicious fondue recipe from Cyma last year. It made me crave again. This is a great appetizer.

I have been controlling my eating lately because I notice I eat more when I am stressed. So whether it’s stress about the kids, work or a possible credit card debt settlement (thankfully that won’t happen!), I eat. So when the negative feelings come, I try to stay focused and ward off negative energy through exercise.

• 5oz. of Beer
• 3oz. chopped cooked spinach
• 3oz. chopped artichoke hearts
• 1 demitasse spoon of minced garlic
• 8oz. shredded cheddar cheese
• 5 turns of cracked black pepper
• 3 cups of cubed bread – french/rye/pumpernickel
• 2 cups of vegetables – coliflower/carrots/celery/broccoli

Cooking Steps:
- First heat the beer on high heat until hot, add spinach, artichoke hearts and minced garlic and stir with a fork.
- Slowly add shredder cheddar. Whip continuously with a fork. Continue to add cheese and whip until your cheese is a "warm honey" consistency.
- Add pepper.
- Stir with a fork until the consistency is uniform.
- Turn the heat down to low, place bread and vegetables in to a basket or platter.
- Skewer bread and vegetables and dip into cheese fondue.
- Serves 2 to 4 people.

WSOP Player Spotlight: Phil Ivey

Phil Ivey is the record holder for total tournament winnings as of 2010, but this is just a snapshot of the many accomplishments that he has had over his impressive career. Ivey is seen as the best all around poker player by many in the industry, including a large number of the people who have played directly against him. The reason, they say, is that Ivey isn’t just a one trick horse. He can play online poker or live poker. He can player large table games, tournaments, or head to head. Whatever he does, he’s likely to come out on top.

For Ivey, it started in New Brunswick with telemarketing. He and a group of friends, whom he met through a telemarketing company, began a regular poker game which allowed Ivey to get some practice while he was still too young to gamble. He continued to get experience by taking trips to Atlantic City, but did so before he was 21 years old. His nickname "No Home Jerome" comes from the fake ID that he used to get this valuable experience.

Ivey has some of the most impressive numbers for a WSOP player. In addition to his high all time winnings, he has won seven bracelets. This was all done between 2000 and 2010, and he set or broke various records along the way. In 2000, he began by becoming the only player to beat the famed Amarilo Slim heads up. He won three bracelets in 2002, tying with two other players for the record of most bracelets won in a single year. He has reached the final table in WSOP events on 22 occasions, and passed the money point a full 36 times. He’s famed for his skill at the table and his philanthropy off of it, and continues to make an amazing impression in the poker world each year.

That’s my three favorite things when I enjoy a day in the beach. It’s too bad I am not there right now. The kids are asking for another summer trip before school starts and we are thinking we can give in to their request but we need to go nearby. It would not be a problem if we own a house by the beach, like the houses featured along Tamarindo. It  is a small, peaceful beach town on the Pacific side of Costa Rica. And it’s one of the hottest real estate markets in the world right now. Hundreds of condos and homes are being developed in this once secret paradise, but don’t worry about overcrowding. The locals have kept closely adhered to conservation standards that maintain the natural beauty of the location. Tamarindo Real Estate must be booming with clients and sales.

Oh well, maybe I can just have my mango shake right now.
