Gearing Up for the Holidays

My mouth is watering just thinking about all the delicious Christmas food I will eat in about 15 days!I am preparing by going on a crash diet starting today – no rice, soda and sweets for me. Just so I wont look bloated in our annual Christmas pictures. I might need to make sure I wear something slimming too, it will help ;) A relative is actually moving his industrial computer off their house into the storage area because we are expecting a lot of guests to arrive come Christmas day. I am beyond excited!!

Creamy Macaroni and Cheese

A creamy macaroni and cheese recipe, made with Cheddar cheese sauce, cooked macaroni, and seasonings. Top this with buttered bread crumbs, if you wish.

Ingredients:

  • 5 cups cooked macaroni (8 ounces raw)
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 pepper, or to taste
  • 2 cups milk
  • 3/4 cup shredded sharp Cheddar cheese
  • paprika, optional

Preparation:

In a saucepan, melt butter over medium-low heat. Stir flour into the butter until smooth and bubbly. Stir in salt. Gradually add milk, stirring constantly. continue to cook, stirring constantly, until thickened. Add cheese and continue to cook and stir until melted. In an 8×10-inch baking dish, alternate layers of macaroni and cheese sauce. Sprinkle with paprika, if desired. Bake in a preheated 350° oven for 20 minutes, or until hot and bubbly.
Serves 6.

That’s how I am lately – body, soul and spirit. I have been working non-stop since the new year started and while I still have time for idle play and creativity, it is hard when play and art become work. I hate being forced out on me. Plus I am frustrated. I am frustrated in not being able to produce the pages I’ve been itching to do and make and record. In times like this, earning money really becomes a priority. I have been praying hard that a bit of my workload eases up on me in time so I can pursue what I really want to do.

And that involves spending time away from the computer and the internet. Lately, I have been working around 12 hours a day that my husband doesn’t even complain when, just a few minutes after he arrived from work, I ask him to take care of the kids and I close the laptop which has been open since 3AM so I can close my eyes. It turns on again by 7 or 8PM, 2 hours after turn off. It’s a good thing my eyes have not given up on me yet (my back might) or else I would save up for a Laser Eye Surgery Boston procedure since I cannot work with glasses. I feel I’m ugly wearing them and I’m the worst klutz because I always seem to break them within weeks of getting myself a new one. Laser would be the way to go! Cup Number 12

Starbucks red cup

I am on my 12th cup in the race to get the coveted Starbucks 2010 planner. Only three holiday and two non-holiday beverages to go and I can finally have one. I am quite partial to hot Dark Cherry Mocha but I go back to my favorite Caramel Macchiato all the time. I see a lot of nursing students in Starbucks too, no doubt reviewing for the upcoming board exams (I clearly remember when I reviewing and had to learn all about emergency evacuation in two days).

Maybe I will get a Peppermint Mocha Decaf in my next order.
