Have you had your share of Easter candy yet? We skipped the traditional Easter egg hunt and activities for the kids and instead went out to hear mass and shop for things at home: dog food for our puppy, a  mattress for the kid’s new bed and some groceries. We had our share of Easter candy though – M&Ms in Easter colors, nothing gets better than that!

My White Kitchen

In my perfect world, I would have my dream home and in it, I would have my white kitchen and I enjoy being in it as I love to cook!

An all-white kitchen with stainless appliances and fixtures is my dream kitchen. I can’t get chartreuse green out of my mind as an accent after seeing white kitchen model units with it.

Of course, for now, I am stuck with our rented apartment and a makeshift kitchen we made. It actually is livable and hygienic for me, but if I were given a choice, I would replace the kitchen sink. It is placed too low that I need to bend forward to wash the dishes and the water faucet is so low that I need to maneuver to wash big pots. If I had the choice, I would have the standard two stainless steel kitchen sinks – one for soaping and one for washing and I would order from MR direct. A stainless steel kitchen sink is on top of my list if our landlady gives us the go signal to renovate (and have it deducted from our rent)!

Powdered French Toast

Here is what I have been eating for breakfast twice a week (I try to control myself). And I try to limit myself to four pieces. I don’t add maple syrup anymore as the toast alone is sinful already (condensed milk + eggs). Then I always complain I don’t lose weight fast enough! I pair this with a tall (really tall) glass of iced coffee and I know I am starting my day right!

Easy French Toast

Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredient List:

1 cup whipping cream
1/4 cup confectioners sugar (powdered sugar)
—————————-
1 loaf of Texas toast
4 eggs
1 teaspoon cinnamon
1/8 cup milk
—————————-
pure maple syrup

Kitchen Equipment Needed

Large frying pan
2 medium mixing bowls
Electric mixer

Instructions:

Step 1: Chill a medium mixing bowl and beaters for your electric mixer for 10 minutes in the freezer.

Step 2: Beat 1 cup of whipping cream and 1/4 cup confectioners sugar until soft peaks form. Cover and refrigerate until ready to serve the French toast.

Step 3: In a medium mixing bowl, break four eggs and whisk together.

Step 4: Add milk and cinnamon and whisk into the eggs.

Step 5: Preheat frying pan or griddle to a medium heat.

Step 6: Dip a piece of Texas toast into the egg mixtue with a fork and coat both sides of the bread evenly.

Step 7: Place in heated pan or griddle. Repeat with as many pieces of bread will fit into the pan at once.

Step 8: Fry until golden brown.

Serve hot and serve with butter, maple syrup, a spoon of whipped cream and a dusting of confectioners sugar.

Nervous

It has been a long time since I talked to a room full of people in public and while I am still confident enough of my speaking skills, I still can’t help but have public speaking anxiety whenever I am made to deliver a talk. It’s a good thing my son is confident, he can now speak in school events without getting nervous and he practices on his own.

More Kitchen Stuff

So I was tempted to buy a toaster and blender last Friday but decided to postpone it because I need office furniture for my work desk. Our printer is installed and my tablet is finally out in the open so I really need to squeeze in the purchase of our new CPU or else my laptop might die on me again. I barely let her sleep for more than 4 hrs a day and it functions more like a desktop computer with all cables plugged into her.

 

What am I going to do with a toaster and blender you ask?
Start my diet of course. Summer is the ultimate challenge test before June!

TVs

Did you notice there were a lot of entertainment centers brought in at famous restaurants last week just for the Pacquiao-Clottey fight? They knew that if they cannot get a live stream of the fight, they might as well close shop for the day because almost all people were going to be tuning in at the fight of Pacquiao. It meant more revenue for them because they charged additional expenses for pay per view. We went to a swimming-BBQ party that day while a family friend brought pay per view rights of the fight. It was my first time watching a full blown fight and while the fight was a bit boring because Clottey was always on defensive, I shouted out of alarm everytime Pacquiao gets hit. Good thing he still won!
