I have always loved the way food is cooked in my parents’ place. The simple sauce can be so yummy! I learned that our grandfather uses Kikkoman Soy Sauce! It’s like a testosterone booster for taste!

Here are some recipes to help you celebrate Kikko De Mayo, courtesy of Kikkoman.

Lime And Ponzu Carne Asada Marinade

Ingredients

  • 2 pounds flank or skirt steak
  • 1 cup Kikkoman Lime Ponzu
  • 2 limes, juiced
  • 4 cloves garlic crushed

Instructions

Combine, Ponzu, lime juice and garlic. Pour over steak and marinate overnight.

Mango Ponzu Salsa

Ingredients (Makes 2 3/4 cups)

  • 3 tablespoons Kikkoman Ponzu
  • 2 tablespoons lime juice
  • 2 tablespoons brown sugar
  • 1 teaspoon cayenne pepper
  • 2 cups diced mango
  • 1/2 cup diced jicama
  • 2 stalks green onion, chopped
  • 2 tablespoons chopped cilantro

Instructions

In medium bowl, whisk ponzu, lime juice, sugar and pepper until sugar is dissolved. Add mango, jicama, green onion and cilantro; toss to combine.

Shrimp Fajitas

Ingredients (Yield: Serves 6)

  • 1 pound medium shrimp, peeled and deveined
  • 1 clove garlic, minced
  • 1 small onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 tablespoon vegetable oil
  • 1 cup lightly packed cilantro
  • 1/2 cup Kikkoman Lime Ponzu
  • 1/3 cup lime juice
  • 12 flour tortillas, warmed

Instructions

Stir together shrimp, garlic, Ponzu and lime juice, let stand at room temperature 20 minutes. Heat oil in a large skillet over medium high heat. Add onions and green peppers to the skillet saute for 3 minutes, add shrimp and cook until shrimp turn pink, toss in cilantro. Serve with tortillas.

I Love Wendy’s!

I really do. If you would let me pick a fast food restaurant I can eat in over and over again, I’d choose it in a heartbeat. I especially love their Biggie Iced tea, baked potato with bacon and cheese and the classic burgers because of its veggies. I actually try to limit everything as I googled Wendy’s food calories and I almost died of a heart attack (I’m exaggerating of course) when I learned the baconator is 600 calories! If I eat that plus fries I would have consumed my daily caloric intake in one sitting and would need to get fat burners from fatburners.org!

Fitness Diaries: Month 1

(April 15-May 15)

I am officially down 10lbs. I never thought that simple portion control and MOVING as much as you can contribute to it. I am pretty strict with my diet four days a week but take 3 days off and eat as much as I want. Really. I am not taking any pills like apidexin or tea, just really putting effort to move, exercise and sweat. With the current heat, sweating doesn’t really take much of an effort. I have slacked so much this week but I am psyching myself up to go back to my regimen tomorrow. I still have one month to lose around 20lbs before I reward myself with something big! It’s enough for me to work it!

I have been thinking of getting these adorable looking cupcakes for the husband on our anniversary next month. Unfortunately, the guy doesn’t like sweets and since I am on a diet, I won’t be able to finish all the cupcakes which would be an ultimate waste :). (The kids are not cake fanatics too). It can be quite pricey that I am afraid they would need a stronger POS machine like with the Symbol LS2208.

 

But really who cares? They sure are an eyecandy!

Cloudy With A Chance of Meatballs

My 7-year-old and I were in the mood for a film last week. It was raining and he was getting over a week-long cold that had interrupted regular life to an alarming degree. I checked out the Direct TV listings and found the perfect movie for this damp, dreary situation: “Cloudy with a Chance of Meatballs.” I had seen the trailer, heard the grumblings from the Internet peanut gallery regarding classic children’s text and Hollywood’s treatment thereof, and I decided: this looks funny.

My gut instinct was correct. This is an animated spaz-fest of slapstick mishaps, mad-scientist catastrophes of grand proportions, and excellent voice work by Bill Hader, Anna Faris, James Caan, Andy Samberg, and (wait for it) Mr. T. With barely an educational platitude (other than: don’t mess with the environment by making giant food fall from the sky), Cloudy is concerned with backyard scientist, Flint Lockwood, who attempts to accomplish amazing feats in biology, but would really love a show of affection from his heavy-browed dad (played with epic emotional suppression by James Caan). Flint’s failure to succeed at anything through most of the movie makes it rather adult in scope, and also a tiny bit based in the real. Who among us has achieved worldwide fame and recognition?

Cloudy with a Chance of Meatballs’, introduces us to an ensemble cast of townies, including a sociopathic mayor (Bruce Campbell) who constantly ruins everything, a smart news reporter playing dumb in order to have a successful TV career (Farris), and an overreaching cop who wants to impress his son (a well-cast Mt. T). In a nod to the famous children’s book by Judi and Ron Barrett from which it’s based, there are raining foodstuffs.

The last third of the movie is a bit too frantic and might cause some anxiety in younger viewers. My son, in his viral haze, had trouble following some of the plotline during the chase scenes involving giant roasted chickens and a machine resembling a digestive system in the sky, but he laughed at it all anyway. We both did. We’re hopeless slapstick-humor enthusiasts and this film had our number.

There are now online college classes which will help people who want to study but don’t have the time and additional resources to commute to and from school.

Money Doesn’t Grow on Trees.

I was told that money doesn’t grow on trees so I should be wise in spending hard-earned money. There was a time when I didn’t care about saving and spent each dime I received as soon I got it. I used to tell myself I deserve to splurge and indulge and “pay” myself for a job well done. Unfortunately, it caught up on me and I was up to my ears in debt in no time. I find it a blessing that I was able to have a clean slot after paying it all off, but it still is a very hard lesson for me to learn.
We are really in the age of consumerism. Personal savings rates have dropped in recent years and remain low by historical standards as many people continue to spend beyond their means. So you better take down a budget for each month. The first element of any budget is your income, or how much money you receive each month. Next, you need to know how you spend your money. Start by tracking your spending for a month. Gather bills and receipts, and don’t forget to include newspapers from the corner store and trips to the soda machine. Write down your expenses and break them into categories. From there you can see how much money comes in and out.

One basic principle: Less Spending = More Saving. Before you fully understand the operations on options trading you need to understand this very basic principle. Think one hundred times before you buy something. Is it something I need or just want? If I need it, do I need it right now? Or a later time will be better?

Living simply is a habit you can get used to if you just track your spending. You will be surprised, amazed and even embarrassed when you write down everything in paper. And you will realize, money doesn’t grow on trees.
