This is the yummy Seafood Kare Kare which was ordered by the birthday girl, my Mom. I really an am not a fan of seafood with sauces (I prefer them steamed, grilled or fried) but this one is an exception. I devoured all the pusit in record time and helped myself to the clams too!

My cousin wants to put up a restaurant soon. He has a degree in Hotel and Restaurant Management and took cuisine classes. But he wants to earn some credits in business administration. So we would not feel so guilty eating the aligue rice and then some more meaty goodness and have our bcbsnc health plans used right away (because we might get hospitalized!), we ordered these tasty veggies from the menu. I personally liked the eggplant ensalada as it was really tasty!

Not for the faint of heart (and those with high blood pressure, most definitely), this rice is sure to keep you full even with a few spoons of viand alone. I thought I need to scout for cheap insurance after eating it because I might die early! :)

Restaurant Business.

A few friends invested what they have earned from their online writing gigs on food stalls. Surprisingly, it did very well so what they are doing now is expanding. Expansion has been very stressful and taxing for them as money has been flying out the window as fast as it can. They recently hired a Las Vegas accounting firm to help them account every single penny they have been earning and it has helped a lot. Bookkeeping has not been one of my friend’s strongest points so spending money for competent people to track down her expenses was one of her wisest investments so far.

We were finally able to try out this restaurant for my Mom’s birthday. Simple surroundings packed with lots of tasty food. I actually love it – would love to come back. I am sure the husband would love it there.

Recipe: Breaded Chicken with Lemon Glaze

Breaded Chicken with Lemon Glaze
I would be doing this for the kids. They always love fried chicken so this would be a welcome variation.

We are trying to eat less pork and beef so this will perfect.

 

Spend quality time with your loved one with this crispy-on-the-outside, juicy-on-the-inside lemony-sweet dish.

Serves
Prep Time 10 minutes  Cooking Time 15 minutes

3 chicken breasts, deboned and cut into strips
salt and pepper to taste
1/2 cup flour
1 large egg, beaten
1/2 cup Japanese breadcrumbs

For the lemon glaze
1 tablespoon cornstarch
1/2 cup water
3 tablespoons lemon juice
3 tablespoons honey
parsley for garnish

Season chicken with salt and pepper. Coat with flour, followed by beaten egg, then with breadcrumbs. Fry chicken in oil until golden.
Set aside.
2 Make the glaze: Dissolve cornstarch in water then throw this mixture in, along with all the other ingredients, in a saucepan. Cook and stir over medium heat, until it boils and becomes slightly thick. Drizzle glaze on chicken or serve on the side. Garnish with parsley.

Yummy tip:
Prefer a stronger tangy flavor? Add 2 tablespoons lemon juice and 1 tablespoon honey to the recipe.

A Vacation

That’s what I badly need. I know I have been saying this for years now and it still hasnt happened. YET. If only money was not an issue. If only I had invested on silver or gold instead of shopping all the time. I’d have the savings – AND the vacation. While I cannot afford to go overseas like to the Caribbean for a vacation, it doesn’t mean I’m not dreaming of it. There is a new cancun all inclusive resort in the Caribbean that I badly want to try! They have resorts that cater to everybody – the honeymooners, the family, single people wanting to meet other people – that I just know we will have fun! I personally would want a Anniversary Getaway with the husband next year – we will be married for five years until then!
